It’s been years since I’ve made a grilled corn salad. Not quite sure when they slipped off my radar but I’m glad I had the thought.
While the corn was grilling I cut up some tomatoes, cucumbers, red onions, garlic and herbs, all from my garden.
I added a can of black beans, sliced the corn off the cob and dressed it all with lime juice, chilli and olive oil.
It made for a pretty tasty lunch.
