Today for lunch was a salad, freshly picked from our raised garden beds at work. Mixed spicy greens with lots of arugula and mustard. Beet tops. Basil, oregano and parsley. Shaved carrots in 2 colours. Shaved yellow beets. Three kinds of tomatoes and a cucumber. Dressed with a big spoon of corn relish from last year. And a wee piece of leftover chicken on the side.
I love this time of year!
